At Nitrolabs, we use nitrogen for preparing our frozen desserts because it is so cold (-196 ° C) it can almost immediately freeze our freshly prepared ice cream mix.

The method of using liquid nitrogen to freshly prepare frozen desserts is widely used by top chefs in Michellin star rated restaurants.

When the liquid nitrogen is released it creates a cloud of cold vapour freezing the ice cream mix in record time with almost no ice crystallisation. Fewer ice crystals means a creamier and more delicious product.

Thanks to this method, we can prepare the product freshly on demand, and as it’s always fresh we don’t need to add additives or preservatives.
